Revisiting the Land of Mullets...

so we will be living the "Suite" life as we watch the race.
Surprisingly, I prefer sitting on the bleachers
t-shirt wearing, mullet sporting, cooler carrying fans.

This will be a short trip because we have to be back Saturday
for a baseball tournament.
Looking forward to staying at the Great Wolf Lodge in Grapevine.
Now this is my kind of camping!!

PLEASE, raise your big toe and repeat after me ....
I will always wear sandals that fit. My toes will not hang over
and touch the ground, nor will my heels spill over the backs. And the sides and tops of my feet will not pudge out between the straps.
I will go polish-free or vow to keep the polish fresh, intact and chip-free.
I will not cheat and just touch up my big toe.
I will sand down any mounds of skin before they turn hard and yellow.
I will shave the hairs off my big toe.
I won't wear pantyhose even if my misinformed girlfriend, coworker,
mother, sister tells me the toe seam really will stay under my toes if I tuck it there.
If a strap breaks, I won't duct-tape, pin, glue or tuck it back into
place hoping it will stay put. I will get my shoe fixed or toss it.
I will not live in corn denial; rather I will lean on my good friend Dr.
Scholl's if my feet need him.
I will take my toe ring off toward the end of the day if my toes swell
and begin to look like Vienna sausages.
I will be brutally honest with my girlfriend/sister/coworker when she
asks me if her feet are too ugly to wear sandals.
When wearing flip flops, I will actually flip and flop, making the correct noise while walking and I will swear NOT to slide align="center">or drag my feet while wearing them.
I will go to my local nail salon at least once per season and
have a real pedicure (they are about $35 and worth EVERY penny).

Texas Braggin' Chili
3 lbs. lean ground beef
2 bulbs garlic
6 tbsp. chili powder
1 tsp. comino seeds
1 huge onion, chopped
1 sm. can tomato paste
1 sm. can Ranch Style beans (optional)
1 lg. can tomato juice or V8 juice
4 beef bouillon cubes
Salt and pepper to taste
Saute beef and chopped onion; add chili powder and comino seeds. Saute a few minutes. Don't burn! Add tomato paste and mix well, then add tomato juice (or V8) to make soupy. Next add beans (optional) and bouillon cubes. Simmer several hours, stirring occasionally. Heat should be low enough so the mixture bubbles now and then. Serve with rice scoop on top and side dish of crushed jalapeno or red peppers for twang. The longer you cook it the better it gets. Serves 10 normal chili-heads. Yield: 6 Texans.
Easy Tex-Mex Cornbread
Ingredients:
3 boxes Jiffy Cornbread Mix
1 can (13 1/2 ounce size) creamed corn
3 eggs, beaten
1/4 cup milk
1 1/2 cup taco flavored shredded cheese (or Mexican Blend)
1 small can chopped green chilis, drained
2 teaspoons chili powder
Directions:
Mix all the ingredients together with a spoon until just moistened. Spread in a 9x13 pan that has been coated with cooking spray.
Bake at 350 degrees for about 30 minutes or until golden brown. Test by inserting a toothpick or tapping on the top to see if it's firm. Do not overcook or it will dry out. A metal baking pan works best -- if you use a glass pan it may take less time. Serves: 24
Texas Sheetcake
MUST BE MADE IN A 15X10X1 JELLY ROLL PAN
1 cup butter
1 cup water
1/4 cup cocoa
2 cups sugar
2 cups flour
1/8 teaspoon salt
2 eggs
1 teaspoon baking soda
1/2 cup sour cream
1 teaspoon vanilla
Frosting, below
chopped pecans (optional)
Preparation:
Frosting
1/2 cup butter
1/4 cup cocoa
1/4 cup plus 2 tablespoons milk
1 box (1 pound) confectioners' sugar, sifted (4 1/4 cups sifted)
1/2 teaspoon vanilla
Cake: Combine butter, water, and cocoa in saucepan over medium heat; heat until butter melts. Add sugar, flour, salt, eggs, soda, sour cream, and vanilla; mix well. Pour into a 15x10x1-inch jelly roll pan. Bake at 350° for 20 minutes. Spread frosting over hot cake and sprinkle with chopped pecans.
For frosting, combine butter, cocoa, and milk in a saucepan; bring to a boil. Add remaining ingredients and mix well with electric mixer. Spread over the hot sheet cake then sprinkle with chopped pecans.
Serves: 24

My former student, Sterling Knight,
stars as heartthrob Chad Dylan Cooper.
Teachers aren't supposed to have favorites,
but Sterling was always one of my favorites.
Such a gifted kid... even at age seven.
I once saw him sitting alone at recess so I walked up
to him to ask what was wrong.
He simply stated,
"I'm just trying to think of how to save the rainforest..."

Now we have been reunited on Facebook.
I've actually have atleast 6 of my former students as FB friends!!
I've enjoyed seeing how they've matured into fine adults. :)

He will also star as Zac Efron's son in the upcoming
movie "17 Again" which comes to theatres in April.
Random Things About Jill

1. It is very painful for me not to post some type of photo or clipart along with each of these random things. That is just the way my brain is wired. That is why I have a blog. Wait a minute! I just realized you can upload a photo to go with a note. Hmmm....
2. My husband proposed to me with a fortune cookie containing "Will you marry me?... in bed." at a chinese restaurant in Beaumont, Tx. He added "in bed" because our favorite joke was adding this phrase at the end of our fortunes. One of my favorites... “Aspire to be great, then give everything you have.” … in bed.
3. I am the baby of seven children. Yes, a little spoiled I guess you could say. I like to think I've kept my parents young. 80 & 81 years old... married 62 years... I love them so much! At times I feel robbed that Judi got 19 more years with them than me. :)
4. Around the age of 23, I dated a body builder for about a month. This did not work for me. I usually dated tall, slender guys (Jason & Eddie) and all those muscles on this particular fellow creeped me out. Not to mention the first time I realized he shaved his legs I almost screamed!
5. A little over a year ago, I thought I was a 17 year old cheerleader again and did a running round-off. A recent x-ray of my leg showed that I've been walking around with a broken fibula since the round-off stunt. The bone healed itself.
6. While in Rome three years ago, my credit card was stolen at an ATM near the Trevi Fountain. I fell for the "your card is stuck inside the ATM and you'll have to wait until tomorrow when the bank opens to get it out" scam you've all read about. Close to $2500 was charged on that card by the next evening.

7. My favorite seasons are spring and autumn. I could do without summer and winter.
8. I was named Teacher of the Year at Dulles Elementary in 1995. My name was on a billboard and there was an article in the paper. My mom still has that article under a magnet on her frig. I loved being a teacher.
9. I originally resisted the whole Facebook thing. I didn't think I would like it but I've obviously fallen hard for FB... hook, line and sinker. It has brought me back to people I've really missed. Go internet!
10. My father-in-law was a football star at Rice University. My mother-in-law was a cheerleader at Rice University. They met while doing a publicity photo shoot for a Rice Calendar. My mother-in-law ditched her Westpoint fiance and married Ray Alborn. They are still madly in love. Ray Alborn was the last football coach at Lamar University. They are finally bringing football back to Lamar... they were idiots to ever let it go in the first place.

11. When riding in the car by myself, I love to crank the radio up and sing at the top of my lungs.
12. I could not live without coffee. I don't need all that fancy lingo..."Tall, skinny, decaf, 2 pump toffee-nut latte, and could I get the whip on the side?" or "Iced Single Vente, 7 pump Peppermint, Caramel Sauce Top and Bottom, Light Ice, No whip, Mocha." I'm not gonna lie... I'm all about a complicated Starbucks coffee every now and then, but my true love is a good old cup of "regular" coffee.

13. I despise doing laundry. I'm a freak about how I do my laundry so I think that is why I hate it so much. I only dry certain clothes for 8 minutes then hang to dry. I have a two hour long process to get Eric's white baseball uniform pants white again. Too much work.
14. I really dislike drinking milk or tea through a straw. I will do it... because I hate putting my lips on restaurant glasses, but it still creeps me out.
15. My husband and I have the same reccuring dreams: 1. Our teeth are falling out 2. We show up in a college class after being absent for several weeks feeling completely lost and unprepared.
16. My two biggest guilty pleasures are long hot jacuzzi baths and Dove creamy milk chocolates. I will open a bag of these chocolates and steady eat them while I shop. Oh, I know I di-n't just admit to that. Oh yes I did!
17. My husband and I are very good friends with our priest. Let's just say his hip quotient is way above ours. We've been to Vegas with him a few times and it is like having your own personal tour guide. He's attended more cool concerts in the past year than I've attended since being married. We will remain great friends for a lifetime.
18. I have an obsession with email. I love it. I check my email atleast 25 times a day. Fast and easy...
19. I can not and will not eat a hamburger without french fries. I'd rather starve. I can not and will not eat a sandwich without chips. I'd rather starve.

20. I've become a martini girl. No... not those newfangled chocolate and pomegranite martinis. I'm all about an old fashioned dry gin martini, extra dirty, shaken. I love the little ice crystals that form on top. So good...
21. I was so good at raquetball my freshmen year in college, Coach Perkins had me playing with the guys in my class. I took several semesters, only played with the guys & loved it!! I have not picked up a raquetball since...
22.. I always knew that I would be atleast 30 years old before having my first child. I was right. I always knew that I would only have boys. I was right. Being a mom to my boys has been the most amazing experience of my life. Nothing tops it or ever will – nothing. They are simply THE BEST!!
23. I drove a yellow CJ-5 Jeep in high school. Now I drive a red Jeep Commander.
24. With five older siblings, I was turned on to great music at a very young age. When Carol and I would play house, she would pretend her husband was Donny Osmond and I would pretend my husband was Paul McCartney.

25. I grew up in a small town called Sour Lake, Texas. It was a great place to grow up. Some of the best memories of my life took place at Pinewood Country Club... at the pool, in the pool, on the golf course, on the tennis courts, at the end of the Long Road, in a golf cart, I could go on and on.

Take It From Us...

1. Avoid carrot sticks. Anyone who puts carrots on a holiday buffet table knows nothing of the Christmas spirit. In fact, if you see carrots, leave immediately. Go next door, where they're serving rum balls.
2. Drink as much eggnog as you can. And quickly. It's rare.. You cannot find it any other time of year but now. So drink up! Who cares that it has 10,000 calories in every sip? It's not as if you're going to turn into an eggnog-alcoholic or something. It's a treat. Enjoy it. Have one for me. Have two. It's later than you think. It's Christmas!
3. If something comes with gravy, use it. That's the whole point of gravy. Gravy does not stand alone. Pour it on. Make a volcano out of your mashed potatoes. Fill it with gravy. Eat the volcano. Repeat.
4. As for mashed potatoes, always ask if they're made with skim milk or whole milk. If it's skim, pass. Why bother? It's like buying a sports car with an automatic transmission.
5. Do not have a snack before going to a party in an effort to control your eating. The whole point of going to a Christmas party is to eat other people's food for free. Lots of it. Hello?
6. Under no circumstances should you exercise between now and New Year's. You can do that in January when you have nothing else to do. This is the time for long naps, which you'll need after circling the buffet table while carrying a 10-pound plate of food and that vat of eggnog.
7. If you come across something really good at a buffet table, like frosted Christmas cookies in the shape and size of Santa, position yourself near them and don't budge. Have as many as you can before becoming the center of attention. They're like a beautiful pair of shoes. If you leave them behind, you're never going to see them again.
8. Same for pies. Apple, Pumpkin, Mincemeat. Have a slice of each. Or if you don't like mincemeat, have two apples and one pumpkin. Always have three. When else do you get to have more than one dessert? Labor Day?
9. Did someone mention fruitcake? Granted, it's loaded with the mandatory celebratory calories, but avoid it at all cost. I mean, have some standards.
10. One final tip: If you don't feel terrible when you leave the party or get up from the table, you haven't been paying attention. Re-read tips; start over, but hurry, January is just around the corner. Remember this motto to live by:
"Life should NOT be a journey to the grave with the intention of arriving safely in an attractive and well preserved body, but rather to skid in sideways, chocolate in one hand, a glass of red wine in the other, body thoroughly used up, totally worn out and screaming "WOO HOO what a ride!"
